Smoked Queso Dip

2 cups shredded cheddar cheese
1 cup cream cheese
1/2 cup sour cream
1/2 cup diced tomatoes with green chilies
1/4 cup diced onion
1/4 cup diced bell pepper
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped fresh cilantro

Preheat your smoker to 225°F (107°C).

In a large mixing bowl, combine the shredded cheddar cheese, cream cheese, and sour cream.

Add the diced tomatoes with green chilies, onion, and bell pepper to the cheese mixture.

Sprinkle in the garlic powder, smoked paprika, cumin, salt, and black pepper. Mix well until all ingredients are combined.

Transfer the mixture to a cast-iron skillet or a disposable aluminum pan.
