1 lb Hot Breakfast Sausage
1 lb Pepper Jack Cheese
32 oz Velveeta
8 oz Cream Cheese
2 Cans Rotel with Green Chilies
1 pkg Taco Seasoning
3/4 C Beer
1/3 C Cilantro

Cook sausage and drain fat, set aside.

For easy cleanup, use a disposable tray.

Place the pepper jack cheese, Velveeta, cream cheese, Rotel, taco seasoning, beer, and cilantro in the pan.

Set smoker to 300 F.

Place tray in smoker for 1 hour, stir, and place back on the smoker for 30 - 45 minutes.

Drain excess grease.
