Smoked Queso Dip

16-ounce block of Velveeta cheese
pepper jack cheese
Jack cheddar cheese
smoked gouda cheese
cilantro
1 can of Rotel
maple sausage
red onion
jalapenos

Chop up the cheeses: Velveeta, pepper jack, Jack cheddar, and smoked gouda.

Chop jalapenos and red onion.

Saute red onion and jalapenos in oil until softened.

Add fully cooked maple sausage to the mixture.

Combine all ingredients in a cast-iron pan: sausage, onions, cilantro, Velveeta, Rotel, pepper jack, Jack cheddar, and smoked gouda.

Preheat the Pit Boss pellet smoker to 305°F.

Place the cast-iron pan in the smoker and let it smoke for about 40-45 minutes, stirring after 15-20 minutes.
