Bring a pot of water to a rolling boil for the lasagna noodles.
In a small saucepan, melt 1 to 2 sticks of butter over medium heat.
Add 1 to 2 tablespoons of minced garlic to the melted butter and mix well.
Stir in a little grated or shredded Parmesan cheese to the garlic butter mixture and mix until consistent.
Pour the garlic butter mixture into a container and refrigerate until ready to use.
Add a bit of oil to the boiling water to prevent the lasagna noodles from sticking together.
Cook the lasagna noodles according to package instructions until al dente; drain and set aside.
In a mixing bowl, combine cottage cheese or ricotta cheese, frozen chopped spinach, Parmesan cheese, 2 eggs, and the meat; mix well.
Spread a layer of spaghetti sauce on the bottom of a baking dish.
Lay out one lasagna noodle on a flat surface; spread a portion of the cheese and meat mixture evenly over the noodle.
Roll the noodle tightly from one end to the other and place seam-side down in the baking dish.
Repeat with remaining noodles and filling until all are rolled and placed in the dish.
Cover the rolled noodles with remaining spaghetti sauce; sprinkle with mozzarella cheese and Parmesan cheese on top.
Drizzle with olive oil and sprinkle with Italian seasoning blend.
Cover the dish with foil and bake in a preheated oven at 325 to 350°F for an unspecified time.
Remove the foil and bake until cheese is bubbly and golden, for an unspecified time.
Let cool for a few minutes before serving.
