Start by boiling the potatoes in cold water with rock salt until tender, about 20-25 minutes.
Once cooked, drain the potatoes and let them dry outside to remove excess moisture.
Mash the potatoes using a potato masher or ricer until smooth.
Place the mashed potatoes on low to medium heat for a couple of minutes to evaporate any remaining moisture.
Remove from heat and incorporate the unsalted butter into the mashed potatoes until fully melted and combined.
Add 3 egg yolks to the mixture and mix until well combined and the color is golden.
Season with salt flakes and nutmeg, mixing thoroughly to ensure even distribution of seasoning.
Put the mixture into a piping bag and pipe decorative shapes onto a baking tray lined with parchment paper.
Preheat the oven to 200°C (420°F) and bake the piped potatoes for about 15-20 minutes until golden brown.
