1 cup crimini mushrooms, sliced
1 medium eggplant, diced
1 cup carrots, shredded
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 medium onion, chopped
2 cloves sliced garlic
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
1/4 cup fresh basil, chopped
2 cups strained tomato
2 cups ricotta cheese
1 cup cottage cheese
2 large eggs
1 cup grated Parmesan cheese
3 cups shredded mozzarella cheese

Preheat the oven to a high temperature for roasting vegetables.

Prepare crimini mushrooms by quartering some and cleaning them with a paper towel.
