Whisk together eggs, milk, water, melted butter, sugar, salt, and all-purpose flour until smooth.
Let the batter rest for a few minutes.
Heat a non-stick skillet over medium heat and lightly grease it with butter.
Pour a ladle of batter into the skillet, swirling to coat the bottom evenly.
Cook until the edges lift and the bottom is lightly golden, about 2-3 minutes.
Flip and cook the other side for another 1-2 minutes until golden.
Transfer the crepe to a plate and cover to keep warm.
In a separate pan, melt butter over medium heat and add cubed apples.
Sprinkle with sugar and cinnamon, cooking until apples are tender, about 5-7 minutes.
Add vanilla essence and lemon juice to the apple mixture, stirring to combine.
Place a few spoonfuls of the apple mixture onto one half of each crepe.
Fold the crepes over the filling and serve warm.
