Soak apples in cold water with a squeeze of lemon juice to prevent oxidation.
Melt 3 tablespoons of softened butter in a pan.
Add 1 cup of brown sugar and a pinch of salt to the melted butter.
Stir in 1 tablespoon of vanilla extract and 1/2 cup of water.
Add 2 tablespoons of lemon juice and cook for about a minute.
Remove water from the soaked apples and add them to the mixture.
Sprinkle in 1 teaspoon of cinnamon and combine.
Mix 1 tablespoon of cornstarch with 3 tablespoons of water to create a slurry and add it to the apples.
Cook the apple mixture for about 5 minutes over medium heat until soft, then turn the heat to low and turn it off.
Transfer the apple filling to a bowl.
In a separate bowl, combine 1 cup of all-purpose flour, 1 cup of milk, 3 tablespoons of melted salted butter, and 2 eggs.
Whisk the batter together until smooth.
Coat a non-stick skillet with cooking spray.
Pour 1/4 cup of batter into the skillet and cook for about 30 seconds until set.
Continue cooking crepes until all batter is used.
