Peel the apples and slice them thinly using a mandoline.
Add water, lemon juice, sugar, butter, and apple juice concentrate to the Thermochef jug.
Turn the Thermochef on to 80 degrees for 30 seconds at speed one to melt the butter.
Add the sliced apples to the Thermochef jug.
Set the Thermochef to 100 degrees at speed one for one minute to cook the apples.
After one minute, check that the sauce is bubbly and boiling, ensuring all fruit is in contact with the juice.
Cook the apple mixture for another minute at 100 degrees on speed one.
Mix half a teaspoon of potato flour with water to thicken the sauce.
Set the Thermochef to 100 degrees at speed two for 30 seconds to thicken the sauce with the potato flour.
Layer the thickened apple sauce over the warm crepes.
