Greek yogurt reduces calories while maintaining creaminess
Cream together 1/4 cup softened butter and 1 cup white sugar in a stand mixer.
Add 2 large eggs to the mixture and mix until combined.
Add the dry ingredients directly into the mixing bowl: 1.5 cups white flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon cloves, 1 teaspoon cinnamon, and 1 teaspoon nutmeg.
Beat the dry ingredients into the wet mixture until combined; the batter will be thick.
Add 1 can of tomato soup to the thick batter and mix until fully incorporated.
Optionally, add 1 cup of raisins and 1/2 cup of walnuts to the batter and mix again.
Scrape the sides of the bowl to ensure everything is mixed well and mix one last time.
Prepare a 9 by 13 cake pan by spraying it with cooking spray.
Pour the cake batter into the prepared pan and smooth it evenly with a spatula.
Bake in a preheated 350°F (175°C) oven for 28 to 30 minutes; check for doneness at 28 minutes.
While the cake cools, prepare the frosting by mixing 1 stick (1/2 cup) softened butter and 8 ounces room-temperature cream cheese in a bowl until smooth.
Add 1 teaspoon vanilla extract to the frosting mixture and mix again.
Gradually add 1.5 cups powdered sugar to the frosting and mix until smooth.
Ensure the cake is completely cooled before frosting it with the cream cheese frosting.
Spread the frosting evenly over the top of the cake using a spatula.
Optionally, sprinkle chopped walnuts on top of the frosted cake.
