Today, they have gained popularity beyond Taiwan, with variations appearing in bakeries worldwide, showcasing the universal appeal of this delightful pastry.

Sift the flour, milk powder, and baking powder three times.
In a bowl, mix 1/2 cup of room temperature butter until whipped.
Add the sifted mixture a small amount at a time, then add salt and sugar.
Add 1 whole egg and 1 egg white, beat together before mixing into the flour.
Knead the mixture until it forms a firm ball of dough and let it sit for 20 minutes.
In a non-stick pan, place 1 can of crushed pineapple and mix frequently for about 25 minutes until dried.
Divide the dough into 10 pieces, each weighing about 68 grams.
Divide the pineapple filling into 10 equal pieces.
Flatten each ball of dough, place filling in the center, and pinch to enclose it.
Use a mooncake mold to shape the mooncake and press firmly to ensure the design is captured.
Preheat the oven to 400°F (204°C).
Bake the mooncakes for 15 minutes.
Mix the reserved egg yolk with milk and a sprinkle of sugar for the coating.
Brush the egg mixture over the mooncakes and bake for an additional 15 minutes.
Allow the mooncakes to cool before eating.
