25g red chilies (about 1 large chili)
3 garlic cloves, peeled

Preheat oven to 350°F (175°C). On a tray, arrange shallots, tomato, chilies, and garlic. Drizzle with oil, season lightly with salt and pepper. Roast for ~10 minutes until softened and lightly charred.

Heat a dry pan over high heat. Toast candlenuts until golden. Add roasted peanuts and toast briefly. Remove and allow to cool slightly.

In a blender, combine roasted aromatics and toasted nuts. Add a splash of water and blend until smooth and thick like peanut sauce.

In a pan over medium-high heat, add a bit of oil and pour in the sauce. Stir in 1 cup of water to loosen. Add palm sugar and the twisted lime leaves. Reduce heat to medium-low and gently press the sugar until fully melted, stirring often.

Add 2 tbsp Bango, ¼ tsp salt, and the juice of ¼ lime. Stir and taste. Adjust sweetness, saltiness, or acidity as desired. Add more water for a thinner consistency.

(Optional) Stir in ½ cup coconut milk until smooth and creamy. Let it simmer briefly and adjust to your preferred richness.
