Add mustard seeds and let them splutter for 1-2 minutes.
Stir in turmeric, cumin seeds, and fenugreek seeds; cook for 1 minute.
Add chopped chili peppers, garlic, and ginger; sauté for 2-3 minutes.
Mix in sugar and vinegar, stirring until sugar dissolves.
Add the mango mixture to the pan and combine well.
Cook for 5-7 minutes, allowing flavors to meld.
Remove from heat and let cool completely.
Transfer to a sterilized jar and refrigerate for at least 24 hours before serving.
