Heat canola oil in a heavy bottom pot.

Add a little water to the spice mixture and cook down for 5 to 10 minutes until it dries and the oil separates.

Add chopped green mangoes (with seed if desired) to the pot and stir to coat with spices.

Cover the mango and cook for about 5 minutes until it starts to dry up.

Add water to cover the mango about 3/4 of the way up and continue cooking for about 30 minutes on medium to medium-low heat until the mangoes are tender and absorb flavors.
