Heat canola oil in a heavy bottom pot.
Add finely crushed garlic and stir until it cooks down without burning.
Add fresh hot peppers or hot pepper sauce and cook for another 30 seconds.
Add amchar masala, cumin powder, and salt to the pot.
Add a little water to the spice mixture and cook down for 5 to 10 minutes until it dries and the oil separates.
Add chopped green mangoes (with seed if desired) to the pot and stir to coat with spices.
Cover the mango and cook for about 5 minutes until it starts to dry up.
Add water to cover the mango about 3/4 of the way up and continue cooking for about 30 minutes on medium to medium-low heat until the mangoes are tender and absorb flavors.
