Preheat oven to 425°F (220°C).
Remove leaves and brown bits from the cauliflower and wash it.
Cut cauliflower into bite-sized pieces and place in a mixing bowl.
Drizzle 2 tablespoons of extra virgin olive oil over the cauliflower and toss to coat evenly.
Add 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/4 teaspoon paprika to the bowl and toss to coat the cauliflower with the seasoning.
Spread the seasoned cauliflower in a single layer on a baking sheet, ensuring not to overcrowd it.
If desired, spray the baking sheet with olive oil spray to prevent sticking.
Roast in the oven for about 20 minutes, tossing the cauliflower with a spatula every 5-6 minutes to ensure even browning.
Once the cauliflower is browned and tender, remove it from the oven and let it cool for a few minutes before serving.
