In a mixing bowl, add the box of French vanilla flavored instant pudding mix and 3 cups of milk.
Beat the mixture for 3 to 5 minutes until it thickens into a pudding consistency.
Fold in the entire tub of Cool Whip until combined, resulting in a pale creamy custard mixture.
Lightly spray a 9 by 13 inch glass dish with cooking oil.
Arrange a layer of graham crackers at the bottom of the dish.
Spread one third of the pudding mixture over the graham crackers, smoothing the top with a spatula.
Add another layer of graham crackers on top of the pudding mixture.
Trim graham crackers if necessary to fit the dish, ensuring the top layer is smooth for frosting.
Spread half of the remaining pudding mixture on top of the second layer of graham crackers, smoothing the top.
Add another layer of graham crackers, ensuring they are full pieces for a smooth frosting application.
For the chocolate frosting, melt 1/2 cup of butter in a mixing bowl and add 1/4 cup of cooking oil.
Mix in 1/2 cup of cocoa powder until there are no lumps.
Add 2 cups of confectioners sugar and 1/2 cup of corn syrup, followed by 1 teaspoon of vanilla essence.
Gradually add 3 tablespoons of milk, mixing until the frosting reaches a smooth consistency, adding more milk if necessary.
Spread the chocolate frosting evenly over the top layer of graham crackers, ensuring the pudding mixture does not peek through.
Refrigerate the Eclair cake for at least 12 hours, preferably overnight, before serving.
