Whisk together 2 boxes of pistachio instant pudding mix with 3 cups cold milk and 1/4 tsp peppermint extract until thickened.
Fold in 8 oz of thawed cool whip gently to maintain airiness.
Drizzle strong coffee over chocolate animal crackers in a squirt bottle for a tiramisu vibe.
Layer half of the pudding/cool whip mixture in a dish.
Add a layer of coffee-drizzled animal crackers.
Repeat with another layer of coffee-drizzled animal crackers and the remaining pudding/cool whip mixture.
Top with more animal crackers and drizzle with coffee.
Refrigerate to set for a few hours or overnight.
Microwave chocolate frosting for a few seconds to mix in 1/4 tsp peppermint extract, then spread over the top of the cake.
Decorate with sprinkles and refrigerate again to set.
