Peel the green plantains and cut them into chunks.
Place the plantains in a pot and cover with water.
Add salt to the water and bring to a boil over medium heat.
Cook the plantains until tender, about 20-25 minutes.
Drain the plantains and return them to the pot.
Add butter and mash the plantains until smooth.
Adjust the consistency with a little water if needed.
In a separate pan, sauté onions and garlic until translucent.
Add vinegar and pepper to the onion mixture and cook for a few more minutes.
Serve the mashed plantains topped with the sautéed onions and garlic.
Optionally, serve with fried eggs, cheese, avocado, and cooked sausage on the side.
