Mangu, a traditional Dominican dish, consists of mashed green plantains and is often enjoyed for breakfast or lunch. It reflects the country's African heritage, where plantains are a staple food. Typically served with eggs, cheese, and avocado, it embodies the Dominican spirit of communal dining and comfort food. Mangu has gained popularity beyond the Dominican Republic, finding its way into Latin American cuisine.

Olive oil reduces saturated fat while adding flavor.

Chicken sausage is leaner, while ground beef is often more affordable.
Peel the green plantains by cutting the outer parts and making slits to remove the skin.
Cut the peeled plantains into four pieces each.
In a pot, add 1.5 cups of water and the plantain pieces.
Add 1 tablespoon of salt to the water and bring to a boil.
Cover and cook until the plantains are tender.
While the plantains cook, slice the onion and place it in a bowl with vinegar and a little salt.
After the plantains are cooked, drain them and return to a bowl, adding a bit of the cooking water to soften them.
Mash the plantains using a glass or any suitable utensil until smooth.
Add 2 tablespoons of butter and a bit of cold water to achieve the desired consistency.
In a skillet, heat oil and add the onion mixture, sautéing for 5 minutes until tender and slightly golden.
In the same skillet, fry the salami until crispy on both sides.
Add cubed cheese to the skillet and fry until slightly golden.
Serve the mashed plantains topped with the sautéed onions, crispy salami, cheese, and a fried egg with a runny yolk, along with avocado.
