3 tbsp granulated sugar
1 tbsp + 1 tsp baking powder
1/2 tsp salt
1/3 cup Kerrygold Pure Irish butter
3/4 cup buttermilk
1 egg beaten
1-2 tbsp granulated sugar for topping
1 jar good strawberry preserves
Fresh strawberries cored and cut into quarters
Clotted cream or whipped cream

Preheat oven to 425ºF (220ºC).

In a bowl, combine flour, sugar, baking powder, salt, and butter. Pulse until the mixture resembles cornmeal.

In a measuring cup, combine buttermilk and beaten egg. Add to the dry ingredients and mix until just combined.

Turn the dough onto a floured surface and knead gently 5-6 times.

Roll out to about 1/2 inch thick and cut into rounds using a cookie cutter.

Place scones on a lightly greased baking sheet and sprinkle sugar on top.

Bake for 12 minutes until lightly browned.

Remove from oven and cool on a wire rack.

To assemble, cut scones in half, spread preserves on the bottom, add strawberries, and top with clotted cream.
