Add diced smoked sausage and cook until browned, about 3-4 minutes.
Pour in vegetable broth and bring to a boil.
Add lentils, diced potatoes, and red bell pepper; season with salt, black pepper, bay leaves, thyme, and cumin.
Reduce heat to low and simmer until lentils are tender, about 25-30 minutes.
Remove bay leaves before serving.
Garnish with chopped parsley before serving.
