Red Lentil Soup

1 tbsp vegetable oil
2 medium onions
6 medium carrots
4 small peeled tomatoes
1 medium potato
4 tbsp tomato passata
2 tbsp garlic + ginger cubes (equivalent to 8 crushed garlic cloves and little grated ginger)
3L boiling water
2 cups of red split lentils (wash throughly)
1.5 tsp salt
1 tbsp cumin and coriander
1 tsp black pepper
1 tsp turmeric
2 cubes of vegetable stock
1/2 lime (or 1 tbsp lime)
Bunch of fresh coriander
1 chilli

Heat the vegetable oil in a large pot.

Add the chopped onions and sauté until translucent.

Stir in the diced carrots, tomatoes, and potato, cooking for a few minutes.

Add the tomato passata, garlic and ginger cubes, and stir well.

Pour in the boiling water and add the red split lentils, salt, cumin, coriander, black pepper, turmeric, and vegetable stock cubes.

Bring to a boil, then reduce the heat and simmer until the lentils and vegetables are tender.

Finish with lime juice and garnish with fresh coriander and chopped chilli.
