Peel the green plantains and cut them into chunks.
Thinly slice the red onions and add them to a pan with extra virgin olive oil.
Soften the onions for about 2-3 minutes without browning them.
Add vinegar and salt to the softened onions.

Add the plantains back to the pot and add butter or extra virgin olive oil.
Smash the plantains until smooth, adding some of the saved cooking water as needed for creaminess.
Plate the mangú and top it with the softened onions and the oil and vinegar mix.
