Traditionally served as a hearty dish in alpine homes, it celebrates the simple yet flavorful combination of cheese and pasta. Today, it's enjoyed across Switzerland and has found its way into various international menus, often served with a side of salad or as a main dish during gatherings.

Slice onions into 3 millimeter slices and caramelize in a pan with neutral oil for 25-30 minutes.
Prepare apple compote by squeezing lemon juice into a bowl to prevent oxidation, peeling and cutting sour apples, and cooking them with 3/4 cup of sugar until desired consistency is reached, about 10 minutes.
Grate 200 grams of Gruyère cheese finely.
For the dough, use 6 eggs and 600 grams of flour, whisking to remove lumps.
Add water and milk in a ratio of 3 parts water to 1 part milk, mixing until the consistency is right.
Season the dough with a lot of salt, tasting to ensure it's over salted, then cover and let it rest for 30 minutes.
Bring a pot of salted water to a boil.
Use a sieve with larger holes to scrape the dough into the boiling water, cooking until it boils three times, cooling it down with cold water in between.
Layer the cooked dumplings with cheese in a bowl and place in the oven at 100 degrees Celsius to melt the cheese between layers.
Spread caramelized onions on top and return to the oven for a few minutes to melt the cheese before serving.
