Brazilian Rice

Brazilian rice, or 'arroz', is a staple in Brazilian cuisine, often served alongside beans and meat. It reflects the country's agricultural abundance and diverse culinary influences. Traditionally, it's prepared simply with onions and garlic, but modern variations include vegetables and spices, making it a versatile accompaniment enjoyed in homes across Brazil.

1 cup long-grain rice
¼ cup olive oil
1 onion, diced fine
3 cloves garlic, minced
2 cups boiling water
¼ teaspoon salt

Rinse the rice in a colander under cold water.

Add the olive oil to a medium-sized pot on medium high heat. When the oil is hot, add the onion and garlic. Sauté for 4 minutes, stirring constantly.

While that is cooking, boil 2 cups of water (or heat up a tea kettle).

Add the rinsed rice to the pot and stir for 2 minutes.

Now add the boiling water and salt. Reduce heat to simmer and cook the rice, covered, for 20 minutes.

Turn off the heat and remove the pot's lid. Let the rice sit for 5 minutes then fluff with a fork.

Optionally top the rice with fresh chopped cilantro and serve.
