Brazilian Rice

5 cups rice
1 tablespoon butter
1 cup of carrots
1 cup golden raisins
1 cup dried plums
1 cup chopped green apple
olive oil
salt
½ onion
1 15oz. can diced tomatoes
1 cup of ham
1 cup frozen peas
1 (15-ounce) can heart of palm
½ cup green olives
2 cups mozzarella

Cook rice according to package directions.

Preheat oven to 350 degrees.

Melt butter in a stockpot. Add carrots, raisins, plums, and apple. Cook over medium heat until the mixture is golden brown and begins to soften.

In a large sauté pan, place a little oil, and the onion and 3 generous pinches of salt. Cook until translucent. Add tomatoes, ham, peas, hearts of palm, and olives. Sauté for a few minutes and season to taste.

In a baking dish, place a layer of rice, then half the fruit mixture, then half of the ham mixture on top. Continue layering, finishing with the rice, and topping with cheese.

Bake until cheese melts and serve.
