Preheat the oven to 350°F (175°C).
Minced the carrots and set aside.
Mix warm water with sugar and yeast in a bowl; let sit until bubbly, about 5-10 minutes.
In a large mixing bowl, combine flour and salt.
Add the yeast mixture, minced carrots, melted butter, and eggs to the dry ingredients.
Mix until a dough forms, then knead on a floured surface for about 8-10 minutes.
Place the dough in a greased bowl, cover, and let rise until doubled, about 1 hour.
Punch down the dough and divide it into equal portions.
Shape each portion into a bun and place on a baking sheet lined with parchment paper.
Cover the buns and let them rise for another 30 minutes.
Bake in the preheated oven for 20-25 minutes, until golden brown.
Remove from the oven and let cool before serving.
