Originating from the coastal regions of Kenya, Vibibi vya tui are traditional coconut rice cakes often enjoyed during festive occasions. These delightful treats celebrate the rich flavors of coconut and are a staple in Swahili cuisine, reflecting the region's agricultural bounty. Today, they are cherished not only in Kenya but also in various coastal communities across East Africa, often served at celebrations and gatherings.

Honey adds sweetness with a unique flavor.
Soak 2 cups of basmati rice in water overnight.
Drain the rice and blend it with 2 cups of coconut milk until smooth.
Add 1 tablespoon of sugar, 1 teaspoon of rapid yeast, and 2 tablespoons of all-purpose flour to the blender.
Add 1/2 teaspoon of cardamom powder and blend until creamy.
Let the batter sit for about 1 hour to allow the yeast to activate.
Add 1 whole beaten egg and 3/4 cups of granulated sugar to the batter and mix well.
In a separate pan, heat 2 cups of heavy coconut milk on medium heat.
Add 1 tablespoon of all-purpose flour and 1/4 cup of sugar to the coconut milk, stirring until thickened.
Use ghee or coconut oil to grease the pan for cooking pancakes.
Pour the batter into the pan and cook until bubbles form, then flip and cover until browned.
