Toast 1/2 cup raw sesame seeds in a flat pan on medium heat for around 5 minutes, stirring constantly.

Grind the toasted sesame seeds into a fine powder using a food mixer.

In a large bowl, mix 2 cups of all-purpose flour, ground sesame seeds, 1/2 teaspoon ground anise, 1/2 teaspoon ground cinnamon, a pinch of mastic gum (optional), 1/2 teaspoon baking powder, and a pinch of salt.

Add 1 1/2 tablespoons of olive oil, 1 1/2 tablespoons of vegetable oil, and 1 tablespoon of melted butter to the dry ingredients and mix well.

Activate 1/2 tablespoon of dry yeast by mixing it with 1/2 teaspoon of sugar and a little warm water; let it sit for a few minutes.

Add 1/2 teaspoon of white vinegar, the orange blossom water with saffron, the activated yeast, and 1 egg yolk to the mixture.

Gradually add 1/2 cup of warm water while mixing until a dough ball forms.

Cut the dough into six equal portions and roll each portion into a thin layer.

Heat vegetable oil in a frying pan until hot and fry the shaped dough until golden brown.
