Mix the asana flour, regular flour, icing sugar, and potato flour together.
Turn on the mixer at medium speed to combine the dry ingredients.
Add the softened butter to the mixture.
Once the mixture is gritty, add the 2 egg yolks.
Mix until the dough becomes smooth, then remove it from the mixer and transfer it to a work table.
Shape the dough into tiny balls about 2 centimeters in size and place them on a baking tray.
For the chocolate version, mix the cocoa powder with the flour and sugar as before.
After shaping all the biscuits, place them in the fridge to rest for about 40 minutes.
Preheat the oven to 180 degrees Celsius and bake the biscuits for 5 minutes.
Remove the biscuits from the oven and let them cool on the baking tray.
Melt the 50 grams of plain chocolate in a double boiler or microwave.
Add a little melted chocolate on top of one biscuit and stick another biscuit on top without pressing too much.
