Add 3/4 cup softened butter to a mixing bowl.
Add 1 cup icing sugar to the bowl.
Add 1 cup hazelnut flour to the bowl.
Add 1 cup all-purpose flour to the bowl.
Add some vanilla sugar to the bowl.
Add 1 teaspoon salt to the bowl.
Add 1 teaspoon cinnamon to the bowl.
Use an electric mixer to combine all ingredients to a crumbly stage.
Use your hands to form the mixture into a dough, as the heat from your hands will melt the butter.
Roll the dough out and cut it into 4 pieces for easier handling.
Form little balls out of the dough, no bigger than hazelnuts, and place them on a baking sheet without flattening them.
Refrigerate the cookies for 1 hour before baking.
Preheat the oven to 325°F.
Bake the cookies for about 20 to 25 minutes, ensuring they do not brown and remain pale.
Organize the cookies by size for easier filling.
Fill the cookies with hazelnut spread, melted chocolate, or apricot jam to sandwich them together.
