1/2 tsp sugar
1/2 tsp pepper powder
2 tsp cornstarch
1/4 cup water or chicken broth
10 oz (300g) lo mein noodles
1/2 tsp toasted sesame oil

Thinly slice 1 lb (450g) of chicken breast or thighs and transfer it to a mixing bowl.

Add 1 tbsp soy sauce, 1/2 tbsp cornstarch, and 1 tbsp cooking oil to the chicken; mix well to coat the chicken evenly.

Set aside to marinate for 15 minutes.

Peel and cut 1 large carrot into matchsticks.

Thinly slice 1 large bell pepper (any color).

Slice the white part of 4 scallions/green onions lengthwise and cut the green tops into 2 inch pieces.

Cook 10 oz (300g) lo mein noodles according to the package instructions; drain and rinse under cold running water until cooled.

Toss the noodles with 1 tbsp oil to prevent sticking.

Heat 2 tbsp oil in a wok/pan and stir fry the marinated chicken until cooked through; set aside.

In the same wok/pan, add the scallion whites and stir fry for 1 minute.

Add 2 tbsp of minced garlic and stir fry for 30 seconds.

Add the carrot and stir fry until it turns a bright orange.

Add the sliced bell pepper and stir fry for 2 minutes or until slightly tender.

Return the stir fried chicken to the wok/pan and mix well.

Pour in the lo mein sauce made of 2 tbsp oyster sauce, 1 tbsp light soy sauce, 1.5 tbsp dark soy sauce, 1/2 tsp sugar, 1/2 tsp pepper powder, 2 tsp cornstarch, and 1/4 cup water or chicken broth; cook until it slightly thickens.

Add the cooked noodles and toss until each strand is coated in the sauce.

Add the green tops of the scallions and mix well.

Drizzle in 1/2 tsp of toasted sesame oil and give everything a final toss.
