Salmon with Spicy Black Bean Salsa

1 15 ½-oz can black beans, drained & rinsed
2 medium vine-ripened tomatoes, cored, seeded & diced small
1/3 cup finely chopped red onion
1/3 cup finely chopped red bell pepper
1 jalapeño, minced (with seeds)
2 tbsp. coarsely chopped fresh cilantro
3 tbsp. lime juice
¼ cup plus 2 tbsp. olive oil, divided
kosher salt, to taste, divided
freshly ground black pepper, to taste, divided

Combine the beans, tomatoes, red onion, bell pepper, jalapeño, cilantro, lime juice, and ¼ cup plus 1 tbsp. olive oil in a nonreactive bowl and stir to combine. Season the salsa with the salt and black pepper. Reserve the salsa while the salmon cooks.

Brush the salmon fillets with the rest of the olive oil and season on all sides with the salt and black pepper.

Place the salmon in the Crisper Tray (skin side down). Slide the Crisper Tray into Shelf Position 2. Select the Airfry setting (400° F/205° C). Set the cooking time to 12 mins. Press the Start Button to begin the cooking cycle.

When the salmon is done cooking, remove it from the Power AirFryer 360 and let rest briefly. Then, serve it with the salsa spooned over the top.
