Add lime juice and enough water to create a thick batter.
Heat oil in a deep pan over medium-high heat until shimmering.
Scoop tablespoons of the batter and carefully drop into the hot oil.
Fry until golden brown, about 3-4 minutes per side.
Remove fritters and drain on paper towels.
Serve hot with a dipping sauce or lime wedges.
