Place the corn ribs on the grill and cook for about 20 minutes, flipping them halfway through.
Check the corn after 15 minutes; they should be soft and have taken on a rib shape.
Remove the corn from the grill and place them on a board.
Prepare the chili lime crema by mixing 1 cup of heavy cream with 2 tablespoons of buttermilk, letting it sit overnight, then adding lime juice and chili seasoning.
Drizzle the crema over the corn ribs, followed by additional chili lime seasoning, cotija cheese, and chopped cilantro.
