Bring a pot of water to a boil.
Shock and clean the ears of corn.
Place the ears of corn into the boiling water and boil for about 10 minutes.
Remove the corn from the water and let it cool slightly.
Cut off a thin slice of the thick stem end of the corn to create a flat surface.
Stand the corn up and put on a kitchen glove on your non-dominant hand.
Using a sharp knife, cut the corn in half horizontally using a rocking motion.
Cut each half of the corn into quarters.
In a large bowl, whisk together avocado or canola oil, lime juice, garlic powder, chili powder, smoked paprika, and onion powder.
Add the corn to the bowl and toss to coat evenly.
Place the corn ribs in a single layer in the air fryer basket.
Cook at 400 degrees Fahrenheit for about 8 minutes or until tender.
Spread mayonnaise on top using a silicone brush.
Sprinkle cojita cheese and cilantro on top.
Serve with lime wedges.
