Stir in milk, vanilla extract, cinnamon, nutmeg, and salt until combined.

Gradually add the flour mixture to the sweet potato mixture, stirring until smooth.
Fold in raisins and orange and lemon zest.
Pour the mixture into a greased baking dish.
Bake for 45-50 minutes until the pudding is set and golden on top.
Let cool for a few minutes before serving.
