Begin by preparing the roti dough. In a mixing bowl, combine 4 cups of all-purpose flour with 0.5 teaspoons of baking powder.
Using your hands, mix the flour and baking powder together.
Gradually add about 2 cups of cold water to the flour mixture, mixing until a soft dough forms. Adjust with more flour if the dough is too sticky.
Once the dough is ready, place it on a lightly floured surface and roll it into a cylindrical shape.
Cut the dough into about 8 equal pieces.
Flatten each piece of dough and add a little oil in the center before rolling it up into a ball to create layers.
Oil the exterior of each rolled ball and set them aside to rest for 15-20 minutes.
Heat oil in a pot on medium heat and add 0.5 teaspoons of cumin seeds, roasting them for about a minute.
Add chopped onions to the pot and sauté until they begin to soften.
Stir in 1 tablespoon of minced garlic and cook for about a minute until fragrant.
Add 2 tablespoons of curry powder and 1 tablespoon of brown cumin powder to the pot, roasting for 3-5 minutes until the spices are fragrant and granulated.
Add the marinated chicken (1.87 pounds) to the pot, which has been seasoned with 1 teaspoon of salt, 0.5 teaspoons of garlic powder, 0.5 teaspoons of black pepper, and 2 teaspoons of curry powder. Cook until the chicken is browned.
Cover the pot and let the chicken cook through, stirring occasionally.
