Green Pilaf, or Tavuk Plov, is a traditional dish from Azerbaijan, often served during festive occasions and family gatherings. This dish highlights the use of fresh herbs and spices, reflecting the rich culinary heritage of the region. Today, it is enjoyed not only in Azerbaijan but also in various forms across the Caucasus and Central Asia, showcasing local adaptations and variations.

Instructions

  1. 1Rinse the rice under cold water until the water runs clear.
  2. 2Soak the rice in water for 30 minutes, then drain.
  3. 3Heat vegetable oil in a large pot over medium heat.
  4. 4Sauté chopped onions until golden brown, about 5-7 minutes.
  5. 5Add minced garlic and sauté for another minute until fragrant.
  6. 6Stir in diced chicken and cook until browned on all sides, about 8-10 minutes.
  7. 7Add grated carrots and cook for 3-4 minutes until softened.
  8. 8Mix in the fresh herbs, salt, black pepper, cinnamon, cardamom, and bay leaves.

  • 1/4 cup slivered almonds (optional)

Instructions

  1. 1Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  2. 2In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. 3Add the minced garlic and sauté for another minute until fragrant.

  9. 9While the baklava is baking, prepare the syrup by combining sugar, water, and honey in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes. Stir in vanilla extract and remove from heat.
  10. 10Once the baklava is done baking, remove it from the oven and immediately pour the syrup over it. Allow it to cool completely before serving.
