Slice dried tofu in half horizontally and cut into strips, then chop into small pieces.

Minced 2 cloves of garlic and chop 2 scallions, separating the white and green parts.

Soak shiitake mushrooms in water until soft, trim stems, and chop into small pieces.

Preheat a pan over medium-high heat and add 1 tbsp cooking oil.

Add 120 ml of water and cover the pan to simmer for 5 minutes.

Prepare to cook the noodles by boiling 1200 ml of water with 1 tsp salt.

Add noodles to boiling water and cover the pan, cooking over medium-low heat for 5-6 minutes, stirring gently with chopsticks.
