Preheat the oven to 340°F (or 350°F).
Mix all dry ingredients in a bowl: 1.5 cups all-purpose flour, 0.5 teaspoon salt, 1 teaspoon mixed spice, 1 teaspoon mace, 0.5 teaspoon cloves, 1 teaspoon ground nutmeg, 1 teaspoon ground cinnamon, and 2 teaspoons baking powder.
Set the dry mixture aside.
Break 3 eggs, separating the whites, and zest 1 tablespoon of lemon zest into a bowl.
Squeeze in 1 tablespoon of lemon juice and mix.
Blend 2 cups of mixed dried fruit with 1/3 cup of wine until chunky, adding less liquid if necessary.
Cream together 0.5 cup of vegan butter and 1 cup of brown sugar until fluffy.
Gradually add the egg mixture to the butter and sugar mixture, mixing well after each addition.
Add 2 teaspoons of vanilla extract, 1 teaspoon of almond extract, 1 teaspoon of rose water, and 4 tablespoons of browning sauce, mixing well.
Incorporate the dry ingredients into the wet mixture in two portions, mixing until just combined.
Grease an 8-inch cake pan and line the bottom with parchment paper.
Pour the batter into the prepared cake pan, filling it no more than three-quarters full.
Bake in the oven for about 1.5 hours, checking with a toothpick for doneness.
Allow the cake to cool in the pan for 5-7 minutes before removing it.
Spray the cake with wine or rum to saturate it, optionally punching holes in it for better absorption.
