Sourdough adds depth of flavor.

Mix flour, yeast, and sugar in a large bowl.

Add warm water and mix until a dough forms.

Knead the dough on a floured surface for 10 minutes until smooth.

Place the dough in a greased bowl and cover with a cloth.

Let the dough rise in a warm place until doubled, about 1-2 hours.

Punch down the dough and divide it into sections.

Shape each section into long loaves or baguettes.

Place the loaves on a baking sheet dusted with cornmeal.

Cover and let rise again for 30-45 minutes.

Preheat the oven to 450°F (230°C).

Make diagonal slashes on top of each loaf with a sharp knife.

Bake for 20-25 minutes until golden brown and hollow-sounding when tapped.

Cool on a wire rack before slicing.
