Line 2 mini loaf pans (7X3.5X3.5 Inch) with baking paper and grease with oil or butter.

In a bowl, mix 1 cup whole wheat flour, 1 cup all purpose flour, 2 teaspoons baking soda, 1 & 1/2 teaspoons Himalayan salt, 1 teaspoon cinnamon powder, and 1 tablespoon orange or lemon zest.

Add 1/4 cup pumpkin seeds, 1/4 cup flax seeds, 1/4 cup sunflower seeds, 1/2 cup chopped almonds, 1/2 cup chopped walnuts, 1/2 cup pistachio, 1/4 cup golden raisins, 1/4 cup chopped apricots, and 1/4 cup chopped fig to the flour mixture and mix well.

In a separate bowl, combine 1/2 cup honey, 1 cup milk, and 1 cup buttermilk and mix well.

Pour half of the batter into each prepared mini loaf pan, filling each about 2/3 full.

Bake in a preheated oven at 350°F (180°C) for 25-30 minutes until firm.

Let the loaves cool to room temperature for 1 hour.

Wrap the cooled loaves tightly in plastic wrap and freeze for at least 4 hours.

After 4 hours, using a sharp serrated knife, slice each loaf into thin slices (1/8” to 1/6” thick).

Place the slices on a wire baking rack and bake in a preheated oven at 300°F (150°C) for 25-30 minutes until golden brown.

Allow the slices to cool until golden brown and crisp.

Store the crackers in an airtight container for a week or more.
