Egg Salad Sandwiches

6 large eggs
1/4 cup mayonnaise
1 tsp Dijon mustard
1/4 tsp salt
1/4 tsp black pepper
1 tbsp fresh chives, chopped
4 slices of bread (white or whole grain)
Lettuce leaves (optional)

Place the eggs in a saucepan and cover them with water.

Bring the water to a boil over medium-high heat.

Once boiling, cover the saucepan, remove it from heat, and let it sit for 12 minutes.

After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes.

Peel the cooled eggs and chop them into small pieces.

In a mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, salt, pepper, and chives. Mix well until combined.

Toast the bread slices if desired.
