Add vegetable oil to a saucepan and heat until hot.
Sauté onions in the hot oil for about 30 seconds.

Cut the yam into preferred shapes and rinse it quickly, leaving a little water.
Add salt and turmeric to the yam, mixing well and letting it sit for 5-10 minutes.
Fry the yam in hot oil, adding a bit of water to help cook it through while frying.
Once the yam is nicely fried, remove it from the oil and drain on paper towels.
Season the pepper mix with seasoning powder, add carrots and green bell pepper, and mix.
Add crayfish powder to the mixture for flavor.
Beat eggs in a separate bowl and add them to the sauce, stirring gently on low heat until set.
