1

Soak fresh organic ginger root in water for about 10 minutes to loosen the skin.

2

Peel the ginger using a spoon and break it into manageable pieces.

3

Pulse the ginger in a blender with some water until it reaches a rough texture.

4

Boil 10 cups of water in a large pot.

5

Wash and slice one lime, then juice it and set the juice aside, saving the peel.

6

Add cinnamon sticks, whole cloves, allspice, and ground nutmeg to the boiling water and reduce heat to medium-low.

7

Cover the pot and cook the spices for about 10 minutes.

8

Turn off the heat and add 2 cups of white granulated sugar, stirring until dissolved.

9

Add the fresh squeezed lime juice and lime peel to the pot.

10

Add raw rice and the pulsed ginger to the pot, mixing everything well.

11

Cover the pot and let it cool completely to room temperature.

12

Store the mixture in the refrigerator for at least 24 hours to develop flavor.

13

Strain the mixture using a strainer and cheesecloth to remove particles.

14

Press out the pulp to extract extra liquid and pour into a desired container.
