Irish Bread & Butter Pudding

Preheat the oven to 350°F (175°C).
Grease a baking dish with butter.
Slice the stale bread into triangles and butter each slice on one side.
Layer half of the bread, buttered side up, in the greased baking dish.
Sprinkle half of the raisins over the bread layer.
Add the remaining bread slices on top, buttered side up.
Sprinkle the remaining raisins over the second layer of bread.
In a bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, nutmeg, cinnamon, and salt.
Pour the egg mixture evenly over the layered bread.
Press the bread down gently to ensure it absorbs the liquid.
Sprinkle orange and lemon zest over the top.
Sprinkle brown sugar on top for a caramelized finish.
Bake in the preheated oven for 35-45 minutes until golden and set.
Let cool slightly before serving.
