Ingredients

  • 200g egg noodles
  • 4 cups chicken broth
  • 1 cup sliced mushrooms
  • 1 cup bok choy, chopped
  • 1/2 cup green onions, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp chili flakes (optional)

Instructions

  1. 1Cook the egg noodles according to package instructions. Drain and set aside.
  2. 2In a large pot, heat the sesame oil over medium heat.
  3. 3Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  4. 4Add the sliced mushrooms and cook for another 3-4 minutes until they start to soften.
  5. 5Pour in the chicken broth and bring to a boil.
  6. 6Add the chopped bok choy and cook for 2-3 minutes until wilted.
  7. 7Stir in the soy sauce, black pepper, salt, and chili flakes (if using).
  8. 8Reduce heat and let the soup simmer for 5 minutes.
  9. 9Add the cooked noodles to the pot and stir to combine.
  10. 10Serve hot, garnished with sliced green onions.

Ingredients

  • 1 lb large prawns, peeled and deveined
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup cold water
  • 1/2 tsp ice cubes
  • Vegetable oil for deep frying

Instructions

  1. 1In a bowl, mix the all-purpose flour, cornstarch, baking powder, and salt together.
  2. 2Gradually add the cold water to the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are fine.
  3. 3Add ice cubes to the batter to keep it cold and light.
  4. 4Heat vegetable oil in a deep frying pan or pot to 350°F (175°C).
  5. 5Dip each prawn into the batter, allowing excess to drip off.
  6. 6Carefully place the battered prawns into the hot oil, frying in batches to avoid overcrowding.
  7. 7Fry the prawns for about 2-3 minutes or until they are golden and crispy.
  8. 8Remove the prawns with a slotted spoon and drain on paper towels.
  9. 9Serve hot with dipping sauce, such as soy sauce or tempura sauce.
