1 cup dried pasta (diini or similar)
15 oz can drained cannellini beans
fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper

Heat a pan and add a little oil.

Add 1/4 pound of Panetta or bacon to the hot pan and cook for about a minute.

Add 1 cup of diced onion and 1 cup of diced carrot to the pan and mix together. Cook for 3-4 minutes until softened.

Add 3 cloves of minced garlic to the pan and mix.

Stir in 1/2 teaspoon of red pepper flakes (optional).

Pour in 1.5 cups of chicken stock and a 15 oz can of chopped tomatoes, then mix and bring to a boil.

Add 1 cup of dried pasta (diini) to the boiling mixture, stir, cover with a lid, and reduce heat to a simmer for 15-20 minutes.

After 15 minutes, add a 15 oz can of drained cannellini beans and a big handful of chopped parsley to the pot. Stir in 1/2 teaspoon of salt and 1/2 teaspoon of pepper.

Cover the pot again and heat until everything is warmed through, about 1-2 minutes.

Ladle the mixture into bowls and top with grated Parmesan cheese.
