Plantains provide a similar texture and flavor.

Peel the green bananas.

Chuck the peeled bananas into hot water and boil for half an hour.

Slice red onion and squeeze lemon on it.

Mash the boiled bananas and serve with red onion on top as a dressing.

For an alternative, cut the ends off the green bananas, slice down the middle, and peel the skin off.

Chop the bananas into half and then lengthwise into quarters, aiming for about 5 mm thick pieces.

Preheat the deep fat fryer to 180 degrees Celsius.

Drop the banana chips into the fryer and cook for 3-5 minutes until golden brown and floating.

Drain the chips over the fat and then place on kitchen paper.

Prep thyme and chili to toss with the chips, adding salt and pepper.
